  • approx. 3 lb / 1.4 kg boneless, skinless turkey breast
  • 2 tablespoons olive oil
  • 1 tablespoon kosher salt
  • 1 teaspoon black pepper
  • 1 tablespoon fresh rosemary leaves chopped
  • 1 tablespoon fresh thyme leaves chopped
  • Zest and juice of 1 lemon
  • 1 tablespoon paprika for color

Method
 

  1. Preheat & Prep: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Seasoning Rub: In a small bowl, mix together the olive oil, salt, pepper, rosemary, thyme, lemon zest, lemon juice, and paprika.
  3. Coat: Pat the turkey breast dry with paper towels. Generously rub the herb mixture all over the surface of the turkey.
  4. Roast: Place the turkey on the prepared baking sheet. Roast for 45 to 60 minutes. The turkey is done when its internal temperature reaches 165°F (74°C) using a meat thermometer.
  5. Rest: Remove the turkey from the oven and let it rest for 10 to 15 minutes before slicing. This resting time is crucial for juiciness! Serve with the pan juices.
